• 300 gr strawberries
  • 100 gr sugar
  • 100 ml water
  • 100 ml fresh cream
  • 1 teaspoon locust bean gum
  • 2 tablespoons dextrose
  • lemon juice
  • a pinch of salt


  • rinse and cut the strawberries and put into a mixer with sugar and lemon juice
  • sift the strawberry puree through a strainer by dropping it in a large bowl;
  • add fresh cream, locust bean gum, sugar syrup and a pinch of salt;
  • mix well and transfer the mixture into gelato-maker, operate the machine and allow to stir for 50 minutes;
  • transfer the gelato in a bowl and put on freezer for 1 hour;
