A great way for getting rid of left overs, this frittata di pasta is quick and simple.


  • 500 gr of pasta
  • 6 eggs
  • 3 TBSP parmesan cheese
  • 3 slices provolone cheese
  • 4 slices of ham or salami
  • salt
  • pepper
  • 3 TBSP olive oil


In a large bowl beat eggs with grated cheese, salami,provolone,salt,pepper.

Add pasta and combine all ingredients.

Put the oil in a large frying pan, when it’s very hot add the pasta and cook it on medium heat until the bottom becomes golden brown .

Cover the pan with a lid and remove from the heat, flip the frittata onto the lid. Gently slide the frittata back into the pan. Cook the other side until golden brown.

Note: you can use any kind of pasta like spaghetti, penne, bucatini, rigatoni etc.
