frittata zucchine

  • 8 fresh zucchini
  • clove of garlic
  • mint leaves (or basil)
  • 5 eggs
  • 2 tbs milk
  • 2 tbs extra virgin oil
  • Method:

  • cut the zucchini into slices
  • put 2 tbs extra virgin olive oil and the garlic clove in a frying pan, when hot add zucchini, salt, pepper, mint
  • cook until they become golden brown and soft (not dry)
  • leave to get cold
  • beat eggs in a bowl with salt and milk, add the (cold) fried zucchini and continue to stir
  • add oil in the same pan where you cooked zucchini
  • when the oil is hot add the mixture (eggs and zucchini), let it cook on a high fire for a few minutes then lower the fire
  • when the lower side is almost golden brown, turn it over using a dish (to help you) and replace the frittata in the pan cook for 2 more minutes
