Ingredients:

  • 6 eggplants
  • 1 garlic
  • capers
  • 10 tomatoes (chopped)
  • 10 black Olives
  • basil
  • 4 tbsp extra virgin Olive Oil
  • salt & Pepper to taste
  • Method:

  • cut eggplants in half lenghtwise
  • scoop out insides leaving some meat on edges, chop center meat
  • sauté garlic in oil with chopped eggplant, capers, tomatoes, basil, salt and pepper
  • place eggplant “shoes”on cookie sheet•fill eggplant with mixture
  • drizzle with olive oil
  • place in oven 350 F° for approx 40 minutes
  • decore with a whole basil leaf on top of each eggplant “shoe”
