• 3 tablespoons olive oil
  • 1 small onion, chopped
  • 1 garlic clove
  • 250 gr peeled tomatoes
  • 400 gr day-old stale bread, roughly sliced
  • 2 cups hot water or broth
  • 1 cup basil leaves, chopped
  • 2 Pinches salt and fresh ground pepper


  • put extra virgin olive oil, garlic and onion in a wide pot, over a medium-high flame until hot for a few minutes
  • add the pealed tomatoes and the basil, bring to  boil, let cook for about 5 minutes
  • cut the bread into rough-small pieces and add to tomatoes
  • add the water and continue simmering for 10 minutes, low heat until all the bread has absorbed as much liquid as possible, yielding a baby food-like consistency
  • season to taste, with salt and pepper
  • serve the “pappa” warm in soup bowls with a swirl of oil on top
